Sweet Potato Rounds with Brie, Cranberry & Walnuts

Roasted sweet potato rounds topped with melted brie, tart cranberries, and crunchy walnuts – a perfect appetizer or side dish.

  • For the Roasted Rounds:
  • 2 large sweet potatoes, sliced into 1/2-inch thick rounds
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • For the Topping:
  • 4 oz brie cheese, sliced into small pieces
  • 1/3 cup dried cranberries
  • 1/3 cup walnuts, chopped
  • 2 tbsp honey (optional for drizzling)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato rounds with olive oil, sea salt, and black pepper until evenly coated.
  3. Arrange the rounds in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway through, until golden and tender.
  4. Remove from oven and top each round with a small piece of brie cheese. Return to oven for 2-3 minutes, until cheese is melted.
  5. Sprinkle with dried cranberries and chopped walnuts. Drizzle with honey if desired. Serve warm.

Notes

For extra flavor, sprinkle with fresh thyme or rosemary before roasting. You can also swap walnuts for pecans.
