Golden Sweet Potato Skewers with Feta, Walnuts & Sticky Cranberry Maple

Golden sweet potato skewers topped with creamy feta, crunchy walnuts, and a sticky cranberry maple glaze.

  • 2 large sweet potatoes, peeled and cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss sweet potato cubes with olive oil, smoked paprika, garlic powder, dried thyme, and black pepper until evenly coated.
  3. Thread the seasoned sweet potato cubes onto skewers.
  4. Place skewers on a baking sheet lined with parchment paper and bake for 20-25 minutes, turning once, until golden and tender.
  5. Remove from oven and drizzle with sticky cranberry maple glaze (optional: mix 1/4 cup cranberry sauce with 2 tablespoons maple syrup).
  6. Top with crumbled feta cheese and chopped walnuts before serving.
