Cozy Taco Turkey and Cottage Sweet Potato Boats

A cozy, healthy twist on taco night featuring turkey taco filling stuffed into tender sweet potato boats and topped with cottage cheese.

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 lb ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1/2 cup salsa
  • 1/2 cup cottage cheese
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, diced avocado, shredded lettuce

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender. Let cool slightly.
  3. While sweet potatoes bake, heat olive oil in a skillet over medium heat. Add onion and garlic, cook until softened.
  4. Add ground turkey and cook until browned, breaking it up with a spoon.
  5. Stir in taco seasoning and salsa. Simmer for 5 minutes. Season with salt and pepper.
  6. Cut each sweet potato in half lengthwise. Scoop out some flesh to create a boat, leaving a 1/4-inch border. Mash the scooped flesh and stir into the turkey mixture.
  7. Fill each sweet potato boat with the turkey mixture. Top with cottage cheese.
  8. Optional: garnish with cilantro, avocado, or lettuce. Serve warm.

Notes

For a dairy-free version, omit cottage cheese or use a dairy-free alternative. Adjust taco seasoning to taste.
