Watermelon, Peach, Blackberry & Burrata Cubes with Balsamic Honey Drizzle

Fresh summer fruits and creamy burrata come together in this elegant appetizer, finished with a tangy-sweet balsamic honey drizzle.

Ingredients

  • 4 cups watermelon, cut into 1-inch cubes
  • 2 ripe peaches, pitted and cut into chunks
  • 1 cup fresh blackberries
  • 8 oz burrata cheese, torn into pieces
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • Fresh basil leaves, for garnish

Instructions

  1. In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat and cook until reduced by half, about 5 minutes. Remove from heat and let cool.
  2. In a large bowl, gently toss watermelon cubes, peach chunks, and blackberries with olive oil and salt.
  3. Arrange the fruit mixture on a serving platter. Scatter torn burrata pieces over the top.
  4. Drizzle the balsamic honey over the fruit and burrata.
  5. Garnish with fresh basil leaves and serve immediately.

Notes

For best flavor, use ripe, in-season peaches and cold, crisp watermelon. Burrata can be substituted with fresh mozzarella if preferred.
