Zucchini Garlic Bites

Delicious crunchy zucchini bites with garlic and Parmesan.

Ingredients

  • 1 cup shredded zucchini, drained well
  • 1 clove garlic, grated fine
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tablespoons chopped fresh chives (or 1 tablespoon dried chives)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine shredded zucchini, garlic, breadcrumbs, Parmesan cheese, egg, and chives. Mix well.
  3. Shape the mixture into bite-sized balls or patties and place on the prepared baking sheet.
  4. Bake for 15-18 minutes until golden brown and firm.
  5. Remove from oven and let cool slightly before serving.

Notes

For gluten-free option, use gluten-free breadcrumbs. Squeeze shredded zucchini well to remove excess moisture.
